Keto Seared Seabass in Fish Sauce

This recipe for flaky seabass that's scored and beautifully seared is great way to add healthy seafood into your Keto lifestyle. It's supplemented with super-healthy, high-fiber veggies with less than 9 net carbs.

Step 1
Cut the fish into 5 in x 3 in filets. Blanch the broccoli. Cut the tomato into one thick slice for each serving. Cut the onions and mushrooms into wedges, and slide the scallions. Score one side of the fish by cutting diagonally in two directions to create a diamond pattern on one side (as shown in the video). Salt and pepper the fish. Add oil to a pan over medium-high heat. Place the fish scored-side down in a pan suitable for searing. We used a carbon-steel wok.
Step 2
Add the scallions and the tomato slice, placing one side of the tomato directly against the bottom of the pan. Add the peppers and mushrooms. Turn the fish after 2 minutes in the pan. The scored side should be nicely seared. Then add the ginger and garlic blend, the blanched broccoli, and the stock and fish sauce. Lower the heat to low and simmer for about 2 minutes until the fish is cooked but still moist and tender.
Step 3

Time to plate the dish. Place the fish filet near the center of the plate next to a couple of spoonfuls of our cauliflower faux-rice. Place the charred tomato next to the fish, charred side up. Place the veggies over the top of the faux-rice and spoon the sauce of top.

Step 4
Distribute the broccoli attractively on the plate. Serve with your favorite dry white wine. Enjoy.
Notes and Tips
For Keto dieters best to drink water, artificially sweetened tea or soft drinks, or any organic dry red wine (usually less than 2 net carbs per glass).
