Step 1
Slice the scallions diagonally, cut the peppers into small wedges, and mince the hot chili peppers. Add oil to the pan over medium-high heat.
Step 2
Add the white slices of scallion (retain the green slices) and both types of peppers. Sprinkle the spice blend over the shrimp in a bowl and coat the shrimp thoroughly. Then add the shrimp to pan to char the spice rub turning to get a consistent char on all sides. Add the stock, sugar-substitute, hoisin sauce and the peanuts.
Step 3

After another minute of stirring and turning the shrimp, remove the pan from the cooktop.

Step 4
It's time to plate the dish. Add two spoonfuls of cauliflower faux-rice to the plate. Then pour the chicken, veggies and sauce over the top. Garnish with the green slices of scallion.
Notes and Tips
For Keto dieters best to drink water, artificially sweetened tea or soft drinks, or any organic dry red wine (usually less than 2 net carbs per glass).
