Keto Grilled Cheese Sandwich topped with a Fried Egg
A grilled cheese sandwich is simple to make yet so satisfying. The key to making a grilled cheese sandwich low in carbohydrates and gluten, is buying the right bread. We provide suggestions in the Note section of this recipe.
Add an egg to the sandwich and you raise the delicious factor exponentially. Great for breakfast, lunch or dinner. But with the fried egg added, you'll need a knife and fork.

Step 1
Butter the low-carb bread on both sides with butter you've left out of the fridge for a few minutes to make it spreadable. Then place the bread in a pan or on a griddle over medium-high heat. Check it to make sure it toasts evenly. You might have to rotate it to accomplish a consistent toasting.
Step 2
Once the bottom-side is toasted, flip the toast and carefully put the sliced cheese on one slice. We used smoked gouda for the video. Cover and let the cheese begin to melt. Once the bread is barely toasted on the second side, place the bread without the cheese on top of the other slice with the cheese.
Step 3
Place a pat of butter in the pan or on the griddle and once melted, pour a cracked egg onto the melted butter. Drizzle a few drops of water at the edge of the pan and cover to create steam. This will quickly cook the top of the egg with the steam. After a minute or so remove the toasted sandwich once the cheese is melted, being careful not to burn the bread.
Step 4
Once the egg yolk is cooked to your liking, place the egg atop the sandwich on a plate. Garnish with herbs and berries and serve. It's great with some iced-tea at lunch. Or maybe a cappuccino at breakfast. Enjoy.
Step 5
Remove the ramekins and let them cool for a couple of minutes until they can be handled. Place the ramekins or bowls on a cloth napkin on a plate or shallow bowl. Garnish with fresh herbs or chives.
