Keto Cream of Cabbage Soup

Cabbage is part of the same plant family as broccoli and cauliflower and is a good source of sulforaphane which recent studies indicate might be a cancer preventative. We combine the cabbage with cream in this recipe to create a velvety rich soup that's as healthy as it is delicious.

Step 1
Finely chop the onion and shred the cabbage into 1-inch (2.5 cm) strips.
Step 2
Add the oil to a large pot over medium-high heat. Add the onion and sauté until translucent. Add the shredded cabbage, the spice blend and 1/2 the salt and pepper. Add the water, cover, reduce the heat to low, and simmer for about 30 minutes until the cabbage is tender.
Step 3

Add the cream and stir to combine. Increase the heat to medium-high and add in Gruyère, a half-cup at a time, until the cheese has melted. Taste and adjust seasonings, adding more salt and pepper to suit your taste.

Step 4
Serve, garnishing each bowl with a dollop of cream cheese, crème fraiche or yogurt, a healthy sprinkling of chopped chives, a pinch of ground caraway seed, and a sprig of parsley.
