This recipe for low carb Broccoli Latkes utilizes our cauliflower mash that’s a dead ringer with mashed potatoes without the starchy carbs. We add a bit of shredded Parmesan cheese to give the lacey edges a bit more crunch. Call it a low carb rösti. Call it croquette. Or call it a broccoli pancake. What ever you call it, it’s delicious and low in carbs.

Step 1

In a medium mixing bowl combine the refrigerated cauliflower mash, the broccoli, chives, baking powder, salt, pepper, Parmesan cheese and flour.

Step 2

Beat the eggs and stir them into the mixture to form a thick dough-like mixture that can be formed into small flat disks. Spread the shredded parmesan on a plate or in a ceramic or glass baking dish and coat the exterior of the pancakes with the cheese.

Step 3

Heat a large, heavy skillet over medium heat and preheat the oven to 300 degrees. Add 2 tablespoons of the oil and when it is sizzling hot carefully scoop up heaped tablespoons of the latke mixture and use a spoon or spatula to ease them out of the spoon into the pan. Gently press on the top of each mound to make a small pancake.

Brown on the first side for about 2 or 3 minutes until golden brown, then using a spatula, flip the latkes over and gently push them down so that they will be shaped like pancakes. Brown on the other side and remove to a baking sheet. Continue with the remaining potato mixture, adding oil to the pan, if necessary.

Keep the latkes warm on the baking sheet in the warm oven.
