Keto Diet Blackened Pork Chop Amber Ale Cream

It's Cajun and Keto too. This Blackened Pork Chop has an earthy cream sauce flavored with an amber ale, mustard and brown-sugar substitute (erythritol). Only 11.3 carbs but brimming with flavor.

Step 1
Slice the cabbage into one large wedge per serving. Slice the eggplant into half-moon slices. Slice the scallions, separating white from green slices.
Step 2
Sprinkle the spice blend over the chops. In a flat-bottom pan, add the oil over medium-high heat. Sear the chops. Add the cabbage and eggplant slices in direct contact with the pan. Turn the eggplant to caramelize on both sides.
Step 3

Add the amber ale to deglaze the pan. Add the mustard and brown sugar substitute (erythritol) and cream. Stir. Cover and lower the heat to low. Cook covered on medium-low for another 4 to 5 minutes until the internal temperature on a meat thermometer reaches 145°F (65°C).

Step 4
Warm up the mashed cauliflower and put a couple of spoonfuls on the plate. Top with a chop and the veggies. Then spoon the creamy sauce over the top. Garnish with green scallion slices and herbs (we used mint). You can serve the dish with the same ale you used for the sauce but 12 oz of ale adds another 15 net carbs. See Notes and Tips.

For Keto dieters best to drink water, artificially sweetened tea or soft drinks, or any organic dry red wine (usually less than 2 net carbs per glass).
