Keto Blackened Chicken with Anise Cream

This Keto-friendly version of a popular Cajun classic features a luscious Anise-flavored cream sauce, accompanied by healthy mashed cauliflower (faux-mashed-potatoes), charred cabbage and steamed broccoli. It clocks in at less than 10 net carbs.

Step 1

Season the meat with the spice blend on all sides, then sear the meat over medium-high heat in a pan or skillet suitable for searing (about 1 minute on each side). We used a carbon-steel wok in the video. The spice rub will char to black. That's okay. It won't be bitter.

Step 2

Add the cabbage wedges to the pan, putting them in direct contact with the bottom of the pan. You'll them to char slightly on bottom. Add in the stock, anise liqueur and cream. Add the jalapeƱos, cover and simmer on medium-low heat.

Step 3

After about 7 minutes begin checking the internal temperature every couple of minutes. Remove the pan, still covered from the heat when the temperature reaches 160 degrees F (about 65 to 70 degrees C). The chicken will continue to cook in the covered pan.

Step 4

Plate the chicken, mashed cauliflower, jalapeƱo pepper, and the cabbage on the plate. Add another healthy side. We used broccoli in the video. Spoon a couple of spoonfuls of the pan-sauce over the chicken and mashed cauliflower.

Step 5

Garnish with mint or basil.
