Keto Cauliflower Mash

We found the perfect low-carb substitute for creamy mashed potatoes. This recipe uses mozzarella to create texture that's almost identical to authentic mashed potatoes. I've yet to serve these to anyone that didn't like them just as much or better than mashed potatoes.

Step 1

Cut the cold butter and mozzarella into small cubes. Cut the cauliflower into florets and place in a grocery store plastic bag with a few drops of water and microwave on high for about 2 1/2 minutes until florets are softening but not mushy.

Step 2

Carefully handle the bag to avoid the hot steam when opening the bag. Allow it cool for a couple of minutes until you can handle florets. Put them into a food processor.

Step 3

Place the cauliflower florets into a food processor and disperse the butter and cheese cubes among the florets. Sprinkle in the salt. Process on high speed for about 20 to 30 second until the mixture smooth and has the consistency of mashed potatoes. Add more mozzarella cubes and process if necessary to achieve the desired consistency.

Step 4

Garnish with additional butter and parsley or chives.
