Heat the oven to 375° F (375° C). Grease four 6-ounce ramekins with melted of soft butter. Put the ramekins inside a ceramic or glass baking dish.

Step

 

Place slices of salmon into the ramekins, reserving 1 slice for garnish. Then put a spoonful of cheese into each ramekin and top with one tablespoon of cream and an egg. Season with salt and pepper and a dash of cayenne or pinch of your favorite spice blend.

Put the baking dish into the oven and pour boiling water into the dish halfway up sides of ramekins. Then bake until the whites are set, but the yolks are still liquid (about 15 minutes).

Whip remaining cream in a bowl until soft peaks form. Fold in the horseradish. Season with salt and pepper. Cut the remainder of the smoked salmon into thin strips.

Transfer the ramekins to serving plates. Garnish with the salmon, a dollop of horseradish cream, and chives.
