Asian Fusion Salmon Cakes with Broccoli

Step

Chop the skinned salmon into ¼ inch chunks. Put into a medium bowl, along with spices, the mayonnaise and a tablespoon of chopped cilantro. Mix thoroughly with you hands or a spoon or spatula. Mold about 2 tablespoons of the mix into individual cakes about 3 inches in diameter, about ½ inch thick. Spread the ground almonds on a sheet pan or cutting board and then gently place each side of the salmon cake in the ground nuts, lightly coating the exterior of each cake. Place the cakes on a plate or in a plastic container and place them into the freezer.

Meanwhile, in a food processor or blender combine the avocados, one cup of stock, 4 kale leaves and a tablespoon of minced ginger. Blend until the mixture has the consistency of a thick, creamy soup.
Step

In a skillet sweat the onion and green peppers until tender then add the spices, stock and coconut milk. Combine thoroughly, stirring and bring to a boil. Add on top, the remainder of the kale leaves and the broccoli. Cover and cook in the steaming pan for about 5 to 7 minutes then remove the pan from the heat but keep the contents covered.

In another skillet, add one tablespoon of oil to the pan and bring to just short of smoking over high heat, then turn the heat back to medium-high and carefully place the salmon cakes into the oil, they should sizzle but the oil should not smoke, cook for about 3 minutes until the encrusted cakes turn a light caramel color, then turn and repeat on the flip-side for about 3 minutes. Remove the cakes and place on a warm plate.
Step

To plate the dish, place the solids in the sauce at the base of shallow bowl or rimmed plate, evenly distribute the broccoli on each plate, and place an even number of the salmon cakes on the top and drizzle the sauce over the cakes. Garnish with cilantro and serve.
